Job Full Description
GENERAL STATEMENT OF DUTIES: Under general supervision, supports the Executive Chef in daily management of culinary operations and leads hourly staff in the successful execution of the dining program. The employee must maintain all State and Federal food handling, safety and sanitation standards; adhere to the highest standards of customer service; adhere to the uniform standards at all times and must be able to assume the duties of all hourly positions within the scope of the operation.
EXAMPLES OF WORK:
Supervision of Staff
· Set an example of a positive teamwork environment for all staff
· Supervision and instruction of staff during shift
· Conduct pre-service staff meeting per shift
· Provide clear role assignments for each team member; establish staff deployment per shift
· Communicate conflicts with Management
· Ensure adherence to standards/policies/procedures; works with DDS to complete discipline as required
· Support the training and onboarding of existing staff and new hires – student, full time and part time employees
· Participate in annual associate performance review process
· Ensures that the unit is properly opened/closed and maintained throughout the hours of operation per established unit standards
· Communicates effectively with incoming shift supervisors and managers regarding operational needs and adjustments; both verbally and written as required
Adhere to food management & safety procedures
· Maintain all Board of Health food safety, handling and sanitation standards
· Assist in maintaining all Quality Assurance standards
· Responsible for maintaining sanitation standards at all times including enforcing clean as you go and the oversight of daily, weekly and deep cleaning of facility and equipment
· Ensure all occupational safety standards and policies are being maintained including the proper use of equipment and training of staff as required
Food Preparation & Service
· Provide support and supervision to staff ensuring correct food preparation, cooking and serving methods are utilized for the production of all recipes
· Work with Executive Chef, Production Manager and Dietician regarding food items; communicate any menu changes to staff, ensure proper recipes are utilized per changes
· Ensure that food costs are controlled through a variety of techniques including batch cooking, waste control, stock rotation, recipe compliance, proper portioning methods and Waste Not application
· Ensure accurate adherence in completion of production records to include used and unused portions and shortages of product.
· Support staff during peak periods of service including regular inspection of FOH food service stations
· Focus on customer service and professionalism with all interactions
· Demonstrates a complete understanding of daily menu items and is able to explain same to customers as required
· Participate in the planning and execution of special programming within the unit
· Maintain all brand and program standards
· Communicate any customer related problems or concerns to the appropriate personnel in a timely manner following established procedures
