Position Overview:
We are hiring an experienced Whole Cow Butcher to join our meat processing team. This role involves efficiently breaking down whole beef carcasses into primals, subprimals, and portioned cuts for wholesale and retail distribution. The ideal candidate will have a strong understanding of beef anatomy, safety protocols, and production line flow in a high-volume processing plant environment.
Core Responsibilities:

Butcher whole cows using hand tools, saws, and other processing equipment

Separate carcasses into primal and subprimal cuts according to plant specs

Perform boning, trimming, and portioning with precision and speed

Ensure all cuts meet quality and yield standards

Work on a fast-paced processing line alongside a team

Maintain a clean and sanitary workstation at all times

Follow plant safety, hygiene, and USDA compliance regulations (HACCP, GMPs, etc.)

Identify product inconsistencies or safety concerns and report them to supervisors

Contribute to daily production targets and efficiency improvements

Properly handle and store meat products to ensure shelf life and food safety
Qualifications:
-
1–3 years of experience in beef butchery or meat processing plant work

Knowledge of beef carcass anatomy, yield optimization, and proper cutting techniques

Ability to safely and efficiently use knives, band saws, and other processing equipment
-
Understanding of plant safety protocols and food safety standards (HACCP, USDA, etc.)

Physical ability to stand for long hours and lift up to 75–100 lbs

Comfortable working in cold, refrigerated environments

Strong attention to detail, consistency, and cleanliness

Team player with a positive, professional attitude
Work Conditions:

Cold room environment (35–45°F)

Repetitive tasks and physically demanding labor

May require early morning or evening shifts
